I’ve been sick in bed this week, and a hot cup of wassail was just what the doctor ordered.
I love wassail, and feel like you can’t really screw up this hot cider/orange juice hybrid- even when your head is stuffy and your throat is scratchy. It contains all of my favorite fall spices, and I always relish the opportunity to shove whole cloves into oranges like I did when I was a green-clad, cookie peddling scout, so without any further adieu, the recipe:
2 quarts apple cider
2 cups orange juice
2 whole oranges
1/4 cup lemon juice
1/2 cup whole cloves
4 cinnamon sticks
1 pinch ground ginger
1 pinch ground nutmeg
In a slow-cooker or a large pot over low heat, combine apple cider, orange juice and lemon juice. Press whole cloves into oranges and add to pot to simmer. Add cinnamon sticks, ginger and nutmeg and stir. Bring to a simmer. If using a slow cooker, allow to simmer all day.

Mmmmn! Wassail is a holiday staple in my family. Our recipe involves baked apples, oranges, wine, apple cider, cranberry juice, cinnamon, wine, cloves, and lemon rind. Did I mention wine?

Nin Jiom Pei Pa Koa (ninjiom-hk.cwahi.net) may be another choice. i know alot of people use it, its also non alcoholic, though it’s effectiveness is not as good as alcohol based cough medicine, but it’s still good to use on not so serious scratchy throat.
