Anyone have any good eggplant recipes?

I’m the proud mother of FOUR dinner-ready eggplants in my little patio garden. If anyone has any favorite eggplant recipes, I’m listening :) Thanks in advance!

    No recipes yet? I’m waiting too. I’ve got a huge one (gift from a neighbour who is also a proud eggplant parent) that I want to cook this week — but what to make?

    Hi Nicola! Actually, there’s a FANTASTIC Vietnamese recipe that I make from the cookbook Songs of Sapa. It’s a roasted eggplant with prawns… but I usually use the long and skinny eggplant for that. let me know if you’d like the recipe. I’ll send it your way. Below are photos and a link to the book

    I know I’m a little late here, but I tried this recipe and it was AMAZING. It may even be one of my all-time favorites- highly recommended.

    I cannot find a written recipe, but Milwaukee Eggplant Fries are the bomb! I had to figure out how to make some at home because Milwaukee is too far away. I cut a large Black Beauty Eggplant into 1/2″ THICK FRIES. Dip them into a light tempura style batter. When they come out hot you sprinkle grated parmesan and chopped parsley on them and serve with a wedge of lemon and marinara sauce. Them lemon squeezed on just before you dip them in the marinara is perfection!

    Mousaka is a classic Greek recipe with layered eggplant, ground meat and bechamel sauce.
