Candy is Dandy: Cooking Peanut Butter Cups

With Halloween rapidly approaching, candies and chocolates have infiltrated the entire supermarket. I can typically avoid their sultry stares by skipping the single candy-isle and defiantly turning my back to them at checkout. Lately though, they catch my eye near the produce, dairy and grain isles, give me flirty smiles, and whispering sweet nothings. I walk off in a huff, offended at their ubiquitous cat-calls, but hours later, I drift back to our stolen moments and subtle exchanges, and I find myself wanting candy more than I have all year. Cruel mistress.


I decided that I would not succumb to the pre-packaged stuff this year, and instead, make my own delectables from high quality ingredients with full control over the amounts and proportions, and embarked on homemade peanut butter cups.

Ingredients:
1 16-oz jar Laura Scudder’s Old Fashioned Peanut Butter, Smooth
1 2-lb bag high quality chocolate chips, milk or dark
1 1/2 cup powered sugar
2 TBSP butter, softened
Cooking Spray
Mini Cupcake Papers


Empty the peanut butter into a bowl and stir in the powdered sugar. Mix in the softened butter and set aside. Melt the chocolate in a double boiler, stirring with a spatula. The chocolate should be smooth and velvety. Arrange your cupcake papers onto a baking sheet and lightly mist with cooking spray. Spoon the melted chocolate into the cupcake papers, coating the bottoms and sides entirely. Set the extra chocolate aside. Once all cupcake papers are coated, place the tray in the refrigerator to cool for about five to ten minutes. Pipe or spoon the peanut butter mixture into the cooled chocolate cups, and then spoon the remaining melted chocolate over the top of the peanut butter and place the tray back in the refrigerator for another 30-minutes to set completely. Serve and enjoy. 


Please note that these are ridiculously delicious. Make them when you know friends are coming for a visit, so that you can send them away with the people you love. Otherwise you may find yourself justifying peanut butter cups as a reasonable breakfast choice. This is the voice of experience speaking. :) Photos below.

    Jemeg, THANK YOU for the scrumptious, awesome, delicious, beautiful, better-than-store-bought treats that you sent home with Brain. I would treasure them always, but I am too busy eating them. I treasure the thought behind them, instead! I am trying to be good and have just one a day (like a vitamin!), but … they beckon me. The sirens of the PB Cup world. Willpower: overrated.

    My mum is a big fan of Reese, and one thing we love about Reese is the sweet salty blend which is so addictive. I will love to make these for my mum. Does this have the sweet salty taste that we love so much?

    Wow – finally I understand the importance of peanut butter! (Sorry to say so but for Europeans peanut butter is not quite a staple food…). I definetly have to try making these – they look just really delicious! And I love the idea of “lining” the cups nothing I’ve tries yet… thanks a lot!

    I made these but left out the sugar and the butter (just used the straight peanut butter) and used 60% dark chocolate Ghirardelli chips.i also found it impossible to “line” the paper cups with the melted chocolate so i just layered it. First layer i put choc in bottom of paper liner, let set in refrigerator till hard then some peanut butter which i covered with the rest of the melted choc, then back to refrigerator to finish hardening. They were wonderful!!

    I have found that using reduced fat peanut butter works the best. I have never put butter in them either. And instead of lining cups I just pipe enough chocolate into them to cover the bottom with a thick layer, spoon the peanut butter mix onto that and cover with more chocolate. The heat of the chocolate actually makes the peanut butter flatten out some, especially if you slightly lift & drop the tray a few times before refrigerating. Still an amazing recipe!

      Walmart carries them at the holiday time, also, any crafting store that sells chocolate will carry them.

    These look like an awesome project for this weekend! My hubby and I are low carb so will be using sugarfree chocolate chips and Stevia (cup for cup powdered) inplace of the powdered sugar. Will review this low carb version on my blog 😀
